There are many ways to prepare Achta at home.
Traditionally, it's made from the thin fat layer only that forms on top of the milk by boiling it repeatedly. But this recipe is one of the budget and easy ways to make it at home, same as my mum makes it.

Ingredients

  • Section 2
  • 2 litersfull fat milk
  • 1 tablespoonwhite vinegar or lemon juice
  • Section 2
  • 2 cupfull fat milk
  • 2 tablespoonscornstarch
  • 2 tablespoonsorange blossom water
  • 2 tablespoonssugar

Steps

  1. 1

    Section 1: heat milk in a pot. Once it’s warm (not hot or boiling!) add a tablespoon of lemon juice or white vinegar. When it starts boiling, turn the heat off and set aside.

    The milk will separate and curdle. Remove that curdled cream and set aside to cool down.

  3. 3

    Section 2: In a saucepan, mix milk, cornstarch and sugar, off the heat, then move to medium/low heat while stirring continuously.

  4. 4

    Once the mixture is thick, add orange blossom water. Mix a bit for a few seconds, take off the heat, and combine with section 1.

  5. 5

    Let it cool down, in a large bowl, uncovered, before using it.

    A quick alternative is to skip section 1 and just prepare section 2.
