From the recipe 'Grandma's Soup,' I'm sharing the ropa vieja recipe my grandmother made using some of the meat and vegetables from her soup.

Drain and rinse the chickpeas. Shred the meat. Chop the onion, red bell pepper, and carrot. Peel and chop the garlic. Place the vegetables and diced ham in a large pot.

Sauté the vegetables and ham with the bay leaf in the pot. Remove the bay leaf. Add the white wine and stir. Let the wine cook off for 5-6 minutes.

Add the broth, tomato sauce, chickpeas, and meat. Stir to combine. Let the ropa vieja cook for 10-15 minutes.

Let the ropa vieja thicken for 5-6 minutes, sprinkle with chopped parsley, and stir. Continue cooking for 15-20 minutes.

Remove the ropa vieja from the heat and let it cool slightly. Serve the ropa vieja on a flat plate. Enjoy.
