Carrot deviled eggs

Perfectly hard cooked eggs are stuffed with creamy carrot filling and topped with green onions, are always a hit at any gathering, make these for your next cookout and watch them disappear in a blink of an eye!
Cooking Instructions

Cut the hard-boiled eggs in half lengthwise.

Remove the egg yolks and place yolks to a medium-sized bowl.
- 3
Place the egg white halves onto an egg tray or platter.
- 4
Use a fork to mash the egg yolks until there are no lumps.
- 5
Using the fine side of a grater box, grate the carrot, and add it to a mixing bowl.

Add parmesan cheese, fresh parsley, green onions, salt, black pepper, and paprika if in use. Mix in the mayonnaise, and Dijon mustard.

Fill a piping bag with the yolk mixture and pipe the mixture into each egg white half. Alternatively, you can spoon the egg mixture into each egg white.

Garnish with parsley, parmesan cheese, or sweet paprika.
Cover and refrigerate until ready to serve. Enjoy!

And ever since mom and dad had chickens, and we have had fresh eggs they are even better. I do half with pickles and half with olives. I love deviled eggs. I don't like the overpowering taste of mayonnaise or miracle whip. I use as little as possible to allow the egg taste to manifest itself. For a half dozen eggs (dozen halves), I use about 3 tspns, just enough to bind the filling. Use more if needed for consistency, not all eggs are the same size, and the amount needed may vary a bit. alley927cat
