Queen cookies

We have a cookie (roughly translates to raspberry caves) which is traditionaly with raspberry jam. I preffer them with a jam made of both raspberry and blueberry and in Sweden that jam is called "drottningsylt"=Queen jam.. hence the name I use for these cookies! 🥰

Preheat the oven to 150C⁰
Whisk the butter until white and fluffy before adding powdered sugar and keep mixing. I used the wing on my kitchenaid but an electric whisk works too. It just takes longer time.

Mix the rest of the ingredients in a separate bowl before adding it to the butter mixture and whisk it together. If you're using a Kitchen Aid, I cover the top with a kitchen towel to prevent flour from spreading everywhere.

Make small balls with the dough and use something to press a small dent into it. Place them on a baking tray lined with baking paper. (Example the back of a wooden spoon if its rounded) It should look like a bowl.

Fill the "bowl" with a little jam. Make sure to not overfill them.

Bake them in the middle of the oven for about 20-25 minutes. Remember that different ovens requires different cooking time. They should be pretty pale but slightly golden by the edges. Take out and let cool.
