“Khao Tom Mud” is a classic Thai dessert that has been loved for generations. Traditionally, it’s filled with banana or various types of beans, but this time we’re using sliced raw almonds as the main filling. The almonds add a delicious crunch, and every bite lets you taste the blend of almonds and sticky rice. Almonds also provide energy and help support memory and brain function. This treat is also associated with Nang Songkran, Kirinee Devi, whose symbolic food is beans. It’s perfect for sharing with family or neighbors as a snack during the Songkran festival or for making merit.

Ingredients

  • Ripe Namwa bananas, peeled and sliced thick enough for filling
  • Sliced raw almonds
  • 1 cupcoconut cream (250 milliliters)
  • 2 tablespoonscoconut sugar (or to taste)
  • 1 teaspoonsalt
  • 1 1/8 poundssticky rice (about 500 grams)

Steps

    Rinse the sticky rice thoroughly and soak it in water for 3 hours. Drain well.

    Simmer the coconut cream over medium heat until it starts to separate. Add the sticky rice and stir until the rice is coated. Sprinkle in a little salt and coconut sugar, and stir until dissolved.

    Add the sliced raw almonds for extra crunch and flavor. Stir to combine, then remove from heat and let cool. Prepare banana leaves for wrapping.

    Place sliced almonds, banana, and sticky rice on a banana leaf (amount as desired). Wrap tightly and tie securely. Steam for about 1 hour. Serve on a plate and enjoy.
