I love to create things out of left overs. My chicken pot pie is one of our favorite “leftover” dishes!

Ingredients

4 people
  1. 1 cupchicken (I use the leftover dark meat from my roasted chicken.)
  2. 4 cupsgravy (I use the juice and drippings from my roasted chicken to make gravy and use the leftover gravy here)
  3. 1 cupfrozen peas
  4. 1 cupshredded carrots
  5. 1diced onion
  6. 1pie crust dough (from my recipes)

Cooking Instructions

    Preheat oven to 450

  2. 2

    Chop the chicken and combine all the ingredients except the pie crust in a 9x9 casserole dish or whatever dish seems to fit best

  3. 3

    Roll out the pie crust and cover the dish rolling the edges to form a ridge

  4. 4

    Cut a hole in the center and 4 slits in the dough to vent

  5. 5

    Place dish on a cookie sheet or other pan, cover with parchment paper and bake for 45 minutes until bubbly.

    Uncover and bake until browned

  7. 7

    Serve and enjoy!
