Add everything to a medium-large pot.

Bring to the boil and cook for 35-40 minutes or until the pumpkin is cooked.

Let it cool.

Then using a blender, blend everything together until its a creamy texture.

Return to the heat and add another tablespoon or so of olive oil and season to taste. If its too thick add some more water to the pumpkin cream.
