Toaster Oven Cookies

I just wanted to eat them.
It is ok to switch out the butter for margarine and the milk for soy milk.
Brush with a bit of egg yolk if you want to give it a glaze.
You can also flavor it with cocoa, coffee, green tea, honey, etc. For 70~80 3 cm [1.2 in] cookies. Recipe by @rinna
Toaster Oven Cookies

Cooking Instructions

Add the pancake mix and sugar to a bowl, then add in the butter by crushing it with your hands, and mix so that the dough is crumbly.

Add in the milk and knead. Knead until the dough comes together and is not floury any more. Let the dough sit for 5-10 minutes if you have time.

Roll out evenly to a 3 mm thickness with a rolling pin, and cut out your favorite shapes. (It'll be more crispy and tasty if it's thin.) Line them up on parchment paper laid on top of aluminum foil.

Lightly place the foil on top and toast in a toaster oven for 10 minutes. It is OK once it is nicely browned. Remove the foil and toast for another minute if you want to add more color.

Immediately line up on a cooling rack or paper towel to let cool and to let the water evaporate, and it is done. You should store them in a storage container.

I think it is okay to reduce the amount of butter down to 30 g.

Extra: if you add in one tea bag into the milk and microwave for a minute and a half, you can make tea cookies.

These will turn out to be very fragrant tea cookies if you use the tea leaves as-is.
