Using a stand mixer:
Pour the water, yeast, and olive oil into the bowl of the stand mixer and mix well until the yeast dissolves. Add the flour and salt, then mix thoroughly.The dough will be slightly sticky. Add a little more flour and knead by hand to form a ball.
Lightly flour the bottom of a large bowl and place the dough ball inside. Cover and let rise for one day.

Knead the dough ball again and let it rise for another 4 hours.

On a baking sheet lined with parchment paper, drizzle a little olive oil and spread out the dough. Cover with plastic wrap and let rise again for about 4 hours.

Top as desired (without adding the mozzarella yet) and bake at 400°F (200°C) for 25 minutes. Then add the mozzarella and bake for another 3 to 5 minutes, just until the cheese melts. The pizza is ready.
