【For Pastry】
Put the diced butter, cake flour, and bread flour in a large bowl. Mix roughly, and rub it into your fingertips until the mixture resembles yellowish breadcrumbs. - 3
Add cold water, and fold it in the flour mixture.

Press it and bring it together. Please avoid kneading. Cut it in half, stack it, and press. Repeat 3 times.

Put it out on a work surface, wrap it with plastic wrap, and use a rolling pin to shape it into a rectangle. Let it sit in a fridge for 1-3 hours.

【For Filling】
Dice potatoes into 5-7mm cubes. Add olive oil, salt, and pepper. Mix roughly. - 7
Cover loosely with plastic wrap and microwave on 600W for 3 minutes, and Mix roughly. Microwave on 600W for another 2 minutes until soft. Let it cool.

【For Bake】
Preheat an oven to 220°C / 428 F. Make sure that the potatoes are cold.
Divide the dough into 6 equal pieces. Flour one piece, shape it round, and roll it out to 2 mm thick. Cut out with a 15 cm pastry ring. Repeat the remaining 5 pieces to make 6 circles. - 9
Place cheese and cooled potatoes on a pastry semi-circle. Brush the border with a little water, then fold it in half, making sure that the edges meet.

Pinch the edges together to seal the top and bottom, then fold inward. Use a fork to press the edges and crimp. Prick several holes on the top.

Arrange them on a baking sheet lined with parchment paper or baking mat. Brush each with egg wash. Lower the oven to 200°C / 392 F, bake at for 15 mins, then 170°C / 338 F for 15 mins, totaling 30 mins. Brush each with melted butter. It's done!
