An Indian sweet given a twist with Alphonso mango

First grind sugar and coconut together.

Place a heavy bottom pan on a medium flame gas. Add 1tsp ghee for heating. Add coconut mixture to the ghee and stir.

On slow to medium flame stir for five minutes till sugar is melted.

Now add mango pulp to the pan and cook for five minutes on slow fire.

Add mawa powder, sugar, cardamom powder and saffron and mix well.

Cook on slow flame for 10 to 15 minutes till the mixture gets a dough like consistency.

Grease a tray and spread the mixture evenly. Garnish with pistachio pieces. Cool the contents for one hour.

Remove the solidified mixture in a plate by tapping on the tray from outside. Cut it in to equal size pieces. Our delicious sweet Mango Coconut barfi is ready to be served.
