Lobia or black eyed beans is one of the most nutritional dried beans which can be included in our diet. It has no fat and is low in calories making it a perfect food to be included for diabetics and heart patients. It also has good amount of folates and potassium, which is needed during pregnancy. Lobia curry is a delicious and spicy which uses simple spices. Lobia as such does not have any taste of its own, hence it is easy to cook it with various spices to make it flavourful. Serve the lobia curry along with tandoori roti or boiled rice for weeknight dinner.

Ingredients

4-5 servings
  • 250 gblack eye beans (soaked in water for 7-8 hours & boil till tender)
  • 1/2 cupoil
  • 1large onion (finely chopped)
  • 1tblsp ginger & garlic paste
  • 1/2 cuptomato puree
  • 1 tspsalt or to taste
  • 1 tspred chilli powder or to taste
  • 1 tspkashmiri red chilli powder (not spicy)
  • 1/2 tspturmeric powder
  • 1 tspwhite cumin seeds
  • 1 tspcoriander powder
  • 1tblsp dry fenugreek leaves
  • 1 tspgaram masala powder
  • 3fresh green chillies (sliced)
  • Fresh coriander leaves chopped

Steps

    Heat oil add cumin, onion, ginger & garlic fry on medium flame till gets golden.

    Then add salt, red chilli, turmeric, coriander powder, tomato puree, water 1 cup mix well, cook on low flame till the oil comes on surface.

    Add the boiled beans, water 2 cups mix wait for a boil on high flame, then cover and cook on low flame, till the oil comes on surface.

    Now add garam masala powder, green chillies, dry fenugreek leaves mix and simmer for 10 minutes on low flame garnish with coriander leaves and green chilli.

    serve hot with tandoori roti or boiled rice.

    #Tip:
    You can use 1/2 cup store-bought fried onions instead of fresh onions.
