Wash the spinach well and set aside

Heat a wok and add mustard oil and heat until smoking. This recipe calls for oil to smoking hot. Add whole red chillies, Hing, cumin seeds and stir one second. Add minced garlic and sliced onions. Cool to soften

Add chopped spinach, turmeric powder, red chilli powder and cook until wilted

Cook to soften the spinach

Add sliced tomato and salt and cook well. Cook to cover for 10 mins

Set aside

Serve with steamed rice
