  • For the meat:
  • 1 1/2 poundBeef sirloin steak, 1 1/2 inch thick, one pound after cooking
  • For the marinade:
  • 3 Tbseach lime juice, apple cider vinegar, soy sauce, red wine
  • TbsChipotle spice mix
    California Farm Chipotle Spice Mix from scratch
  • For the fajita vegetables:
  • 1large sweet red pepper
  • 1large Jalapeno pepper
  • 1red Onion
  • 4Tomatillos
  • 1 Poundgreen asparagus
  • For the barbeque griddle and woodsmoke:
  • 3 poundsmanzanita charcoal in chimney
  • 1 piecesoaked oak firewood
  • Tbshigh smoke point avocado oil
  • Tortillas for dipping

  • Equipment: barbecue with griddle stonea made from ceramic floor tile
  • Cost: beef $6, vegetables & other $4, $2.50 per dinner

  1. 1

    Marinade the beef in soy, vinegar, red wine, and spices. Start the charcoal fire, put griddle stone next to fire, cut vegetables, rub vegetables with avocado oil, when stone reaches 450+ F degrees, put soaked oak firewood on top of charcoal, put vegetables on griddle stone, to griddle both sides. Move to warm platter in oven when done.

    Rub asparagus with avocado oil, griddle on stone till done. Move to warmed platter in oven when done.

    Sear marinaded sirloin steak on both sides on griddle stone next to wood fire, one minute each side, put barbecue top down, close chimney damper and air vent dampers half way, smoke sirloin 15 minutes.

    Slice 3 slivers of sirloin across the grain and on the diagonal, 1/8, 1/4 and 1/2 inch thick, taste to decide which thickness is most tender, slice rest of the meat that thickness, serve family style on hot platter with grilled vegetables, serve with home baked hot tortillas, dip in avocado mayo sauce, enjoy.
