Chicken Tinga Tacos

If you like the taste of chipotle you will love chicken Tinga. Chicken Tinga is a Mexican chipotle shredded chicken dish. Can be served many ways, but I chose to put it into tacos. I should warn you that this a pretty spicy dish.

Ingredients

40 minutes
4-6 servings
  1. 2large skinless chicken breasts (about 2 lbs.)
  2. 1Onion sliced
  3. 1Jalapeño sliced
  4. 4garlic minced
  5. Oil for cooking
  6. Salt and pepper to taste
  7. Sauce Ingredients
  8. 1 (7 oz.)can of chipotles in adobo sauce
  9. 1 (16 oz.)can of tomato sauce
  10. 1 TbspChile powder
  11. 1 tspMarjoram
  12. 1/2 tspcumin

Cooking Instructions

    In a small blender or food processor mix all the sauce ingredients. Set to the side.

    Season chicken with salt and pepper. Add oil to a skillet and heat on high. Add chicken to the skillet and brown both sides. About 2-3/side. Remove to a plate.

    If needed add more oil. On medium heat add onion and jalapeño. Cook a couple of minutes to soften. Add garlic and cook for 30 seconds.

    Add chicken back to skillet along with any juices from the plate. Add in the sauce and bring to a simmer. Cover skillet and cook until chicken reaches an internal temperature of 165°F. Should take about 25-30 minutes. About half way turn over the chicken.

    When chicken is done remove chicken. Shred the chicken with 2 forks. Add the chicken back to the skillet to heat up the chicken and mix with all that fantastic sauce.

    The chicken Tinga is now ready to serve. For tacos I serve on warmed flour tortillas with shredded lettuce and shredded cheese. I garnished with tomato slices for some color and the tomato help offset the spicy heat from the sauce. Cilantro and jalapeño circles also make for a great garnish. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
