My taco recipe has evolved over the years. I used deep fried corn tortillas originally, then deep fried flour tortillas, and now soft corn tortillas.
It's really a matter of taste. There are as many ways to make tacos as there are spaghetti or meatloaf!

Ingredients

  1. 1large full boneless chicken breast
  2. 1/2medium onion
  3. 1 tspminced garlic
  4. 1 tsporegano
  5. 1 tbsplemon pepper
  6. 1/2 tspsalt
  7. 1 dozencorn tortillas
  8. 2 cupshredded lettuce
  9. 1 cupshredded cabbage
  10. 1 cupdiced tomato
  11. 1 cupgrated cheese (your choice)
  12. 1small jar of salsa of your choice

Cooking Instructions

    Shred lettuce and cabbage and mix together ahead of time.

    Dice tomatoes ahead of time.

  3. 3

    Use scissors to cut chicken breast into small pieces.

  4. 4

    Dice onion.

  5. 5

    Saute chicken, onion, garlic, and oregano using your choice of cooking oil in a medium skillet or saute pan until chicken turns white.

    Season chicken while cooking with salt and lemon pepper.

    Adjust burner under chicken to low heat to keep chicken warm.

    Add 1/2 Cup salsa to chicken after cooking and turning burner down.

    Slide tortillas individually on each side through hot cooking oil in a separate pan.

    Layer warm tortillas in paper towels as you fry them to soak up excess oil.

    Lay 3 tortillas open on each plate.

    Add chicken, cheese, lettuce, cabbage, and tomato to the center of each tortilla.

    Top each taco with salsa or taco sauce of your choice. (optional)

    Fold each taco over. Serve alone or with rice and beans. Eat and enjoy!
