Wash the beef flesh and pat dry with paper towels. Cut into small pieces. Salt, season. Simmer under a closed lid (or in a slow cooker), without adding water, for about an hour, until soft, over low heat.

Drain the meat juice into a separate container. Pour vegetable oil over the meat, increase the heat and begin to fry the pieces on all sides.
Слить мясной сок в отдельную емкость. К мясу налить растительное масло, увеличить огонь и начать обжаривать кусочки со всех сторон.

Cut the onion into cubes, grate the carrots on a coarse grater. Add vegetables to meat. Fry everything together. Add vegetable oil if necessary.
Репчатый лук нарезать кубиками, морковь натереть на крупной терке. Добавить овощи к мясу. Обжарить все вместе. При необходимости добавить растительное масло.

When the vegetables are soft, add the couscous. Pour in the prepared meat juice. If it is not enough, add boiling water. There should not be too much liquid so that the cereal remains crumbly. Close the lid, remove the heat and let stand for 5-10 minutes.

Mix everything, try the cereal, if it is not ready enough, add a little more boiling water and let it stand under the closed lid for about five minutes. Serve with a salad of fresh vegetables dressed with low-fat yogurt or sour cream.
Все перемешать, попробовать крупу, если она не достаточно готова, долить ещё немного кипятка и ещё дать постоять под закрытой крышкой минут пять. Подавать блюдо с салатом из свежих овощей, заправленных не жирным йогуртом или сметаной.
