I was making Jalapeno Poppers for a party and thought wouldn't it be cool to stuff Jalapenos like we do peppers? This is the end result.

Gather all ingredients and preheat oven to 425F (218C)

Cook sausage over medium heat until no longer pink. While cooking, slice Jalepenos in half and place on a non-stick tray.

Add rice and tomato sauce to mixture. Optional add cream cheese.

Stuff the peppers and top with cheese bake about 15-20 minutes.
