Stir-fried Red Rice and Veggies

Red rice is also called Matta rice in our country India. This rice has a nutty flavour. Iron rich 'red rice' is grown in Brahmaputra valley of Assam, without the use of any chemical fertilizer. The rice variety is referred to as 'Bao-dhaan', which is an integral part of the Assamese food. This rice is popular in Kerala. It's useful to reduce weight. I received the red rice as a gift from Shillong during an official tour.

Wash red rice 2-3 times. In two cups of water, soak red rice for 10 minutes. Transfer the soaked rice with water to a pressure cooker and cook with salt, on low flame for 1 whistle, allow to cool naturally. Arrange and assemble the ingredients.

Heat oil in a wide pan. Add cumin seeds and allow to crackle. Add chopped garlic and and saute till aromatic.

Then, add sliced onions, chopped carrots and green chilli. Saute till onion 🧅 sliced are translucent.

Now add a rest of the veggie and coconut, mix well and cook on high heat to keep the veggie crunchy.

Then, add the boiled red rice and mix nicely with the veggies.

Switch off the flame, add 1 Tbsp fresh lemon juice, garnish with chopped green coriander leaves and njoy the recipe with chopped cucumber 🥒
