After washing the spiny gourd well with water, chop it and also chop the capsicum and tomato.

In a mixer jar add groundnuts red chili powder coriander powder turmeric kasuri fenugreek sugar garam masala and grind it.

Now heat oil in a pan, add mustard seeds, cumin seeds and asafoetida, then add spiny gourd, turmeric and salt, cover the lid and let the vegetables saute for two to three minutes.

Then add tomato and capsicum to it and cover and let it simmer till the tomato becomes soft.

Then add the crushed masala and mix it well. After a minute turn off the gas and add lemon juice and coriander to it and mix.
