Ingredients

  1. Dough
  2. 4 cupsall purpose flour
  3. 2 tspsalt
  4. 2 tspbaking powder
  5. 1/2 cupcold butter, cut into cubes
  6. 1 cupcold water
  7. Filling
  8. 2 tbsplard
  9. 1-1 1/2 lbsground venison
  10. 1yellow onion, chopped
  11. 1orange bell pepper, chopped
  12. 5gloves garlic, minced
  13. 1 candiced tomatoes
  14. 1 tbspcumin
  15. 1 tbspchili powder
  16. 1 tbspgarlic and herb seasoning
  17. 1 tbsppaprika
  18. 1 tspcayenne pepper
  19. 1 tspred pepper flakes
  20. 2 tbspMaggi seasoning sauce
  21. Salt and pepper to taste
  22. Egg wash
  23. 1egg, scrambled

    Prepare the filling. Add lard to a large skillet over medium/high heat. Once hot, add ground venison, onion, bell pepper, and garlic. Cook until meat is browned. Reduce heat. Add tomatoes and seasonings. Simmer until most of the liquid is gone. Remove from heat and let cool.

    Preheat the oven to 400. Prepare the dough. In a large bowl combine flour, baking powder, and salt. Using fingers, cut in butter until crumbly. Add cold water and mix by hand until dough comes together. Section dough into 12 balls. On a floured surface, use a rolling pin to roll individual sections of dough into thin circles. Add filling to center of dough circle, fold dough circle in half, and crimp the edges.

    Put empanadas on parchment lined baking sheet. Brush with egg wash. Bake for 30 mins until golden brown.
