  1. 1 1/2 cupmilk
  2. 2 1/2 tablespoonlemon juice (divided)
  3. 1 1/3 cupmashed bananas
  4. 2/3 cupbutter (softened)
  5. 1/2 cupbrown sugar
  6. 1 cupwhite sugar
  7. 3large eggs
  8. 1 teaspoonvanilla extract
  9. 3 cupsflour
  10. 1 1/2 teaspoonbaking soda
  11. 1/4 teaspoonsalt
  12. I cup almond nuts

    Preheat oven to 350 degrees. Grease and flour a 9 x 13 pan.

    Pace 1 1/2 tablespoon lemon juice in a measuring cup. top to 1 1/2 cup with milk. Set aside (this will be a substitute for buttermilk but if you prefer, you can also use buttermilk)

    Mix together mashed banana with 1 tablespoon lemon juice, set aside.

    Beat together butter, brown and white sugar until combined. Add in eggs one at a time then add vanilla extract. Mix on high until light and fluffy (almost the texture of frosting).

    Combine flour, baking soda and salt in a medium bowl. Alternate adding flour mixture and milk to egg mixture stirring just until combined (Do not overmix). Fold in banana mixture and almonds..

    Pour into prepare pan. Place in the oven and reduce heat to 300 degrees. Bake 60-70 minutes or just until toothpick inserted in center comes out clean (Do not over bake).

    Remove from the oven and place in the freezer for 45 minutes to make the cake extra moist. Cool completely before frosting. (See my "easy banana frosting" recipe).
