Spaghetti and Meatballs

Spaghetti and meatballs might be predominantly known as an Italian grandmother’s specialty, but my Malawian self makes a mean meatball sauce too. Or I’d like to think so.
There’s something magical about making your own meatballs and profiling the taste to your liking by the choice of ingredients and ratios. I’d give up a five star restaurant any day for choice, choice and more choice. Happy cooking my fellow diehard home cooks - we are what our neighbors like about our families.

Thoroughly combine ground beef and all meatball ingredients. Form into balls and refrigerate for 30minutes to allow flavors to absorb and allow meatballs to cook without breaking easily later on

In the meantime, cook pasta according to package instructions. Once cooked, drain and reserve some pasta water for the sauce later. Stop the pasta from sticking by running in under cold water in a colander. Set pasta aside until serving

Preheat oven to 190C. Bake meatballs for 30 minutes or until slightly golden. P.S.:- meatballs can be shallow fried to replace baking

Meanwhile, purée tomatoes in a blender until smooth

In a saucepan on medium heat, heat oil and sauté garlic and chili flakes until fragrant (1 - 2 minutes). Add tomato purée, onion powder and salt, cook down until sauce thickens. Stir in butter until melted, add a cup of reserved pasta water and continue to cook on medium-low. Taste for seasoning and adjust as required

Transfer meatballs into sauce and simmer covered for 20 minutes to cook through and get flavors absorbed

Serve with spaghetti at the bottom, topped with meatballs and sauce. Garnish with cheese if preferred. Enjoy! 😉
