Nearly Cincinnati Chili

Cincinnati Skyline Chili was a regular family meal growing up in the Midwest. Mine is "nearly" the same because I'm not too fond of chili powder, which is used heavily in true Skyline Chili. I substitute minced jalapeño peppers. If you'd prefer the authentic version, leave out the jalapeños and add 1/4 cup chili powder.

Ingredients

  1. SAUCE:
  2. 2 lbslean ground beef
  3. 2onions, finely chopped
  4. 15 oztomato sauce
  5. 2 Tred wine vinegar
  6. 1 TWorcestershire sauce
  7. 6 clovesgarlic, minced
  8. 1/2 ozdark chocolate chips
  9. 1-2 Tpickled jalapeño, minced (or to taste)
  10. 1-1/2 tspsalt
  11. 1 tspcinnamon
  12. 1 tspcumin
  13. 1/2 tspcayenne pepper
  14. 1/2 tspground cloves
  15. 1/2 tspground allspice
  16. 1bay leaf
  17. BASE LAYER:
  18. 1 lbspaghetti, cooked
  19. OPTIONAL TOPPINGS:
  20. 1onion, finely diced
  21. 2 cextra-sharp cheddar cheese, freshly grated
  22. Red kidney beans, heated
  23. Sour cream

Cooking Instructions

    In a large skillet over medium-high heat, brown the ground beef. Drain excess grease. Add onions and garlic and cook another 5 minutes, until fragrant.

    Stir in the remaining sauce ingredients. Bring to a bubble over medium-high heat, stirring. Reduce heat to low and cover with lid. Simmer for 2-1/2 to 3 hours, stirring every 30 minutes or so. Remove bay leaf.

    Serve over spaghetti with desired toppings. Can also be served over hot dogs for Skyline Chili Dog.

    Try it with homemade pickled jalapeños!

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
