Chili-Lime Chicken Gizzards

It is a super sunny Sunday and for whatever reason being home all day keeps me constantly hungry . This week’s CookPad Apron Challenge also suggested the combination of chili and lime, and I could not think of a better way to showcase it than with one of my favorite quick bar bites, chicken gizzards. They are a staple at many roadside stopovers, often served alongside cold drinks and beer to hungry travelers. On the journey from Zomba to Lilongwe, where most of mine and my husband’s family lives, these little pit stops are almost tradition. The drive takes about 4 hours on a good day, but can easily stretch to 5 or 6 with traffic and potholes, making a plate of chili-lime gizzards feel like the perfect pick-me-up. I am therefore recreating that traveling experience whilst seated comfortably at home. The chewy richness of the gizzards pairs beautifully with the fiery kick of chili and the sharp freshness of lime, creating a simple snack with bold, addictive flavors perfect for anytime and anywhere. #CA2025

Ingredients

1 hr
Serves 3 (as a snack)
  • 500 gchicken gizzards (can be cut into halves if desired)
  • 1 tspminced garlic
  • 1 tspminced ginger
  • 1 tspchili powder (adjust to taste)
  • 1 tspsmoked paprika
  • 1large lime
  • 2 Tbspvegetable oil
  • Salt to taste

    Thoroughly clean the gizzards. Place in a pot, cover with water, add a pinch of salt, and simmer gently for 30 minutes until tender. Drain and pat dry

  2. 2

    In a bowl, combine garlic, ginger, chili powder, paprika, salt, pepper, and 1 tablespoon of oil. Toss gizzards in the mixture to coat, and let marinate for 20 minutes

  3. 3

    Heat the remaining oil in a frying pan over medium-high heat. Add gizzards and cook for 5–7 minutes, stirring occasionally, until slightly crispy on the edges

    Once cooked, squeeze lime juice over the hot gizzards and toss well

    Serve and enjoy 😉

Tips

Alternatively, skewer and grill the gizzards (especially if you did not cut them into halves) over a charcoal burner for a smoky flavor. They will remain soft since they were boiled
