California Farm Pan Fried Banana Chiffon Pie

This is such a fun quick cake, you prebake the crust while making the filling, fifteen minutes for the whole thing, chill in fridge, serve. You put pan fried banana and fruit between layers of beaten eggwhites ( called chiffon) , pudding and whipped cream. Grated dark chocolate on top. No further baking needed.

Easy to make, but it needs to chill and stiffen a night in the fridge, you need advance notice if you serve your friends or family.

Ingredients

15 minutes, Cool Overnight
4 people, 1/4 pie each
  1. For the crust: 2 cups of flour, 1/2 cup brown sugar, fresh farm egg, Tbs butter, salt, Tbs lemon juice, Tbs cherry liqueur
    California Farm Cherry Cloves Liqueur
  2. 1 CupPreserved Marachino Cherries
    California Farm Cherry Cinnamon Liqueur
  3. 3fresh ripe Bananas, 2 sliced 1/2” thick lenghtwise and fried, 1 sliced in discs for top
  4. Cupbeaten eggwhites (chiffon)
  5. Cupbanana cream pudding
  6. CupWhipped dairy or coconut cream
    California Farm Fresh Organic Coconut Milk and Cream
  7. Chocolate rasp
    California Farm Hand Made Chocolate
  8. Equipment: bread mixer, parchment paper, air fryer, deep 8” spring form, whisk, cast iron skillet
  9. Cost: cake crust $1, cherries, bananas $1, cream, pudding, chiffon $1, per slice 75 cents

Steps

15 minutes, Cool Overnight
  1. 1

    Make the dough, bake the crust. Put flour, salt, sugar in bread mixer, stir well. Add egg, lemon juice, liqueur, butter cut in Tbs slices, knead till smooth. Scoop in two equal parts, Cover bottom and sides with flour dusted dough, press in place, bake 15 minutes at 400F degrees. Cool.

    Cover crust bottom with whipped cream. Heat banana slices in dry cast iron skillet till carmelized, put on top of cream on crust. Cover with banana cream pudding and half the chiffon, put layer of cherries on top.

    Whipped cream on top, chiffon on top, pudding, chiffon, whipped cream on top, sliced banana on top, grate chocolate rasp on top, chill and serve
