This used to take hours but can be made in just 30 mins in a pressure cooker. Even if you don’t like the feet the broth it makes is AMAZING.
Steps

Put stock, feet, lime leaves, lemongrass and galangal into the bowl of pressure cooker and cook on high for 30 mins. Allow slow release for 10 mins

Remove all but the stock and feet then add the chopped chilli, coriander the juice from the limes and the fish sauce. Keep the soup on the warm setting for 10-15 mins then taste. Add salt and some sugar to taste.

Serve with thai Jasmin rice - ENJOY ❤️
