Ingredients

  • 1 TbspButter
  • 1medium yellow onion
  • 4 clovesGarlic
  • 2 lbsChili Beef or Bison - coarse ground
  • *Wet Ingredients **
  • 1 CanMexican RoTel
  • 1 Cancrushed tomatoes
  • 1 Candiced tomatoes
  • 12 ozlager-style Beer
  • 8 ozBrewed Coffee
  • 1 CanRanch Style Beans - If you're OK with beans in chili
  • *Spice Mixture**
  • 6 TbspChili Powder
  • 1 TbspCumin
  • 2 tspKosher Salt
  • 1 tspChipotle Chili
  • 1 1/2 tspSmoked Paprika
  • 1 tspOregano
  • 1 TbspCocoa Powder
  • *Thickener**
  • 3 TbspMasa Flour
  • 1/2 cupWarm Water

Steps

  1. 1

    Chop and soften Onions and Garlic in butter

  2. 2

    Increase heat, sear meat, and drain fat. Do not overlook meat!

  3. 3

    Add Wet Ingredients, stir well

  4. 4

    Add Spice mixture and mix well

  5. 5

    Bring to a boil, reduce heat to low, cover and simmer for 1 1/2 hours

  6. 6

    Add Masa flour to warm water and stir into a paste then add to chili

  7. 7

    Simmer additional 30 minutes stirring occasionally
