In a large pot, combine the galangal slices, lemongrass pieces, kaffir lime leaves, chilies or vegetable broth. Bring it to a boil, then reduce heat and let it simmer for about 15-20 minutes to infuse the flavors.
Strain the broth to remove the galangal, lemongrass, lime leaves, and chilies, add coconut milk - 2
Test the soup and adjust the seasoning with lemon juice and salt if needed
