Steps
- 1
Dice potatoes and cook them. Either in a boiling pot of water until tender or I use instapot and pressure cook them on low- 00:03
- 2
Then crush the crispy fried onions (use a plastic ziplock to crush them into crumbs). Place into a bowl and add the Monterey Jack cheese.
- 3
Next, preheat oven to 425 degrees. Then clean and pat chicken dry. Season with salt and pepper. Place a small amount of the honey mustard or honey Dijon dressing on the top and coat with the crispy fried onion and cheese mix.
Place the chicken onto a baking sheet. - 4
Toss your green beans into a bowl of oil, salt and pepper. I also like to add garlic (fresh minced or garlic salt/powder). Then add to the baking sheet with the chicken. Cook both for 15-20 min.
- 5
When potatoes are done, mash them adding sour cream, butter, salt and pepper. If they’re too dry, add a little milk to them and continue to mash.
