Sweet Potato and Persimmon Salad: Great for Autumn

I wanted to make a simple and healthier Autumn-style salad. I also like the combination of persimmon and yogurt, so here's another variation with sweet potatoes.

This recipe was quite well-received, so I'm adding these notes:
*I updated the amounts of raisins and walnuts. With this amount, it should be about 34 kcal per serving.

For Step 2, watch over the potatoes and adjust the heating time accordingly. Add as much maple syrup as you like. (The sweet potato and persimmon are already naturally sweetened). Ingredients

2 servings
  1. 1/2Sweet potato
  2. 1Persimmon
  3. 2 tbsp◎ Plain yogurt
  4. 1/2 tbspMayonnaise
  5. 1 tspLemon juice
  6. 1 tsp◎ Maple syrup (or honey)
  7. 1 pinch◎ Salt
  8. 1/2 tbspRaisins (optional)
  9. 1/2 tbspWalnuts (optional)

Cooking Instructions

    Dice the persimmon and sweet potato into 1.5 cm sized cubes.

    Soak the sweet potato in water, then microwave 3 minutes at 600 W. Combine and mix all ◎ ingredients.

    Combine the persimmon and sweet potato with the mixed ◎ ingredients and serve. Also good with raisins and walnuts - top with as much of them as you like.
