Methi Rice (Fenugreek leaves)

Leftover rice is the perfect experiment ground for me in the kitchen, as I can just make varied dishes by adding simple ingredients, in no time.

One such outcome is this dish, by adding my favourite winter-special fresh methi leaves. Cooked with very few ingredients, comes out absolutely delicious.

Tips:
1. Leftover rice yields best results as it’s drier compared to fresh rice, also takes less time to cook.
2. Avoid adding masalas like coriander, cumin, chilli powder, garam masala etc, as this will overpower the fresh methi flavour and also would change the colour of rice. Instead increase the green chilli amount for a spicy version.

Ingredients

  • 2 cupleftover rice/freshly cooked rice
  • 2 cupsfresh methi/fenugreek leaves
  • 1large onion
  • 10/15 podsgarlic
  • 2green chilli
  • 1 tspsalt
  • 2 tsplemon juice
  • 2 tbspoil

Steps

  1. 1

    Chop onion, garlic, chilli & methi leaves finely.

    Heat oil in a pan, add onion, garlic, chilli and salt. Stir-cook until onions and garlic are fried well.

    Now add the methi leaves and cook in high flame, uncovered, so that the water released from leaves are reduced while it’s getting cooked.

  4. 4

    Mix the rice and gently fold evenly. Switch off the heat and add lemon juice.
