Ingredients

  1. 1.1 lbsmustard greens (500 grams)
  2. 9 ozspinach leaves (250 grams)
  3. 9 ozbathua leaves (250 grams, also known as chenopodium or lamb's quarters; if unavailable, use more spinach)
  4. 3-4green chilies
  5. 8-10garlic cloves
  6. 2onions
  7. 2tomatoes
  8. 2 teaspoonscornmeal (makki ka atta)
  9. 1 teaspoonred chili powder
  10. 1/2 teaspoonturmeric
  11. Salt to taste
  12. 2 teaspoonsoil
  13. 2 teaspoonsghee (clarified butter)
  14. 1 teaspooncumin seeds
  15. 1/4 teaspoonasafoetida (hing)
  16. 1bay leaf and 1 dried red chili

Steps

    Wash and clean the mustard greens, spinach, and bathua (or extra spinach). Finely chop them, along with the onions and tomatoes.

    In a pressure cooker, add all the greens, garlic, green chilies, one chopped onion, and one chopped tomato. Add salt. Cook on medium heat for 2 to 3 whistles. Let the cooker cool, then open it and mash everything with a masher or blend in a mixer until smooth.

    Heat oil and ghee in a large pan. Add cumin seeds, bay leaf, dried red chili, and asafoetida. Sauté briefly, then add the remaining chopped onion and cook until golden. Add the remaining tomato, turmeric, red chili powder, and salt. Cook until the tomatoes are soft.

    Once the tomatoes are cooked, add the cornmeal and mix well. Add the mashed greens mixture, stir to combine, cover, and cook on low heat for 10 minutes or until the oil separates.

    Sarson ka saag is ready to serve. Transfer to a plate and enjoy hot with makki ki roti (cornmeal flatbread) for a delicious meal.
