Skillet potatoes & sausages

This is an easy budget friendly recipe that is almost a one-pot meal.
It comes together quickly and you can have dinner ready in less than 30 minutes!

Most recipes call for just sautéing the potatoes in the skillet and cooking with some sort of cooking liquid like chicken stock/broth or water. I preferred to boil the potatoes. If you are pressed for time, skip the boiling and just dice the potato and add a little more skillet cooking time. You can also top the skillet with a loose piece of aluminum foil to speed up the cooking process.

You can also add some bell peppers and onions. I just wanted to keep it simple, without prepping the veggies.
When it comes to serving this, know that it works just as well for dinner as it does for breakfast. To make it even more filling, top it with a runny fried egg or a simple salad. Leftovers will keep for up to 3 days in an airtight container in the refrigerator.

Ingredients

30 minutes
4 servings
  • 3-4russet potatoes, peeled, diced
  • 4-6chicken sausages, diced
  • To taste, salt
  • To taste, pepper powder
  • 1 tsp.chaat masala
  • 2 tbsp.oil
  • 1 tbsp.parsley flakes
  • As required, water

Steps

30 minutes
  1. 1

    Bring water to a boil and add the potatoes. Boil till potatoes are tender and slightly firm. Drain and set aside.

  2. 2

    Heat oil in a skillet and sauté the potatoes till golden.

  3. 3

    Add sausages and sauté to desired doneness.

  4. 4

    Season the potatoes and sausages and mix well.

  5. 5

    Add the chaat masala and parsley flakes. Mix well and serve.
