Ingredients

  • 3 stripsbacon
  • 4 1/2 tablespoonschopped onion, more if desired
  • 3/4 cupchopped celery
  • 4 1/2 Tbschopped green or red pepper, (optional)
  • 3 cupswater
  • 1 1/2 cupsraw, peeled potatoes, (4 medium)
  • 3/4 tspsalt
  • 1/2 tsppaprika
  • 1bay leaf (remove before serving)
  • 4 1/2 Tbsflour
  • 1/4 cupmilk
  • 2 1/2 cupmilk
  • I’m 1 (17 oz,) can whole kernel corn
  • 1 (17 oz)cream style corn

Steps

    In a large pot, fry the bacon slowly

    Frying fish without overcooking
  3. 3

    Add the onion, celery and pepper, and sauté until golden Brown? drain off excess fat

  4. 4

    Add water, potatoes, salt, Paprika and Bayleaf simmer until potatoes are done (about 20 minutes)

  5. 5

    Combine flour with 1/4 cup milk in measuring cup to make paste (add more flour or milk as necessary)

  6. 6

    Add blended paste to potato sauce, pot mixture

  7. 7

    Add rest of milk and corn

  8. 8

    Stir constantly and simmer for five minutes.DO not boil.

Tips

Frying fish without overcooking

Small fish, large fish...it doesn't matter....375 degree oil..when it floats, it's done!
