In a pan heat oil and add all veggies. Add salt and fry them for 5 minutes. Keep aside

Dry roast all ingredients and cool down completely. Grind it into fine powder. Keep aside.

In a pan heat oil. Add cumin seeds, bay leaf, finely chopped onions. Fry onions till brown. Add ginger garlic paste, finely chopped green chillies,tomato paste, cashews nuts paste, kolhapuri masala powder,red chilli powder turmeric powder garam masala powder salt to taste. Mix all ingredients very well and add required water. Cook for 5 minutes.

Add all veggies and saute well. Add dried fenugreek leaves and finely chopped coriander leaves. Mix well.

Serve Hot with Indian bread of your choice.
