Steps
- 1
Soak the dried fava beans for about 8 hours to remove preservatives and help them cook faster.
- 2
Place the soaked fava beans in a pressure cooker or a regular pot with a tight-fitting lid. Add the split fava beans, yellow lentils (both rinsed), tomato paste or blended tomatoes, turmeric, baking powder, and enough water to cover everything with a little extra. Add a bit more water than you think you need to avoid having to add more later, which can make the beans turn dark.
- 3
Bring to a boil, then reduce the heat to very low. Cook for at least 2 hours in the pressure cooker. Remove from heat and let sit, covered, for about 1 hour. This helps the beans and sauce thicken, and any excess water will rise to the top and turn dark—carefully pour this off.
- 4
The beans will keep a nice color and won't turn dark. I like to mash them and store them mashed. Serve however you like. I made some with olive oil and some with a tahini mixture.
