I found this gem on Healthful Blondies. It's so delicious and chewy! You can eat it as is or put on your fav icing.
Cooking Instructions

Mix dry ingredients together in a medium bowl, set aside

Beat butter and brown sugar with an electric beater or mixer until fluffy and creamy.

Add egg then maple syrup until well combined, don't over mix.

Slowly add the dry ingredients into the wet ingredients until well blended. Batter should be sticky.

Preheat the oven to 350 degrees

Roll the batter with your hands into 1 to 1.5 inches ball and place on a cookie sheet 1-2 inches apart. Bake for 10 minutes.

Makes about 48 bite size cookies. Can make your batter balls bigger for larger cookies.
