We start with the butter at room temperature that we mix with the panela. Until we get a mixture and add the honey. Then the eggs and beat until making a sticky dough.

We add the sifted flour together with the spices and salt. Knead until we get a ball that we cover with film and let it rest for at least 1 hour in the refrigerator.

After the resting time we stretch the dough with a roller, leaving it approximately 2 cm thick. Cut with the help of a gingerbread man cutter.

We preheat the oven to 170 ° C. We place the cookies on a baking tray lined with paper.

When we have the entire tray full of cookies, we bake for about 10-12 min or until we see that they are golden brown.

When removing we put them on a rack and let them cool completely. For the icing, we beat the egg white until it foams, then we add the vinegar and while the mixer continues beating, we add the icing sugar by the spoonful. So until you get a thick mixture.
We decorate the cookies to our liking and let them dry at least 1 hour before storing.
