Spinach Corn Muffins

Assemble ingredients, Roughly chop Spinach

In pan add 1 small cube Butter, allow to melt, add finely chopped Garlic and allow to turn slight golden. Then add spinach + little salt + green chilli and sauté for 5 - 6 minutes under high flame. Add sweet corn and saute for around minutes. Spinach shrinks and let water from spinach evaporate and spinach is cooked. Discard green chilli and keep aside.

In a mixing bowl, break eggs, add salt + milk and beat very well. Add chopped Coriander and mix well.

Add cooked spinach and mix well. Add pepper powder and mix well.

Pre heat oven or assembled oven

Take muffin moulds or small steel bowls, grease with butter and pour the mixture into each bowl and put to bake

Bake for 15 - 20 minutes, Muffins are done, check with tooth pick.

Allow to cool and then de mould it.
