These beautiful looking Rice Paper Rolls are a great option on any day. A best snack, a perfect starter and even a healthy Brunch idea. Done in an airfryer, these are crisp and crunchy.
No matter when you wish to eat these, they are just as perfect. The filling can be any and many with a wide range of options. I chose this filling as it was handy as well as at my disposal. These paper rolls are generally uncooked but can be steamed or fried as well for a crisp texture. Healthy and wholesome.
Non-Vegetable version also would be great with Shrimps or Prawns. They are so delicious and delightful.
With Peanut Sauce, it's a winner all the way. You will just love these. Try these for a filling meal that's healthy and nutritious. And quick as well. Take the sheets out from the pack. Dunk each of them in clean drinking water. There is no need of soaking them. Just immerse it for a second or two. See to it that it's done on both the sides. This is basically done to soften the sheets. You can use two sheets too if desired. I took just one for each roll.

Take it out and now start adding the filling one by one. Place a cabbage leaf or lettuce at first. Top it up with the black eyed pea sprouts. Top with julienned capsicum, red carrots and finally the coriander leaves.

Fold it from the sides now. Cover it nicely overlapping them. Now roll just as we do for spring roll sheets. That's it. As easy as that.

Arrange them in the airfryer basket and set the timer to 10 minutes. That's it. Healthy and wholesome. A perfect choice for Iftaar meals this Ramadan. Enjoy!
