Ingredients

2potatoes (cubed)
1 stalkJapanese leek (chop roughly)
Chives (optional)
1 tablespoonOlive oil
Cayenne peppers (to taste)
Salt and pepper
1 teaspoondried oregano
4 clovesgarlic (minced)

Steps

Parboil potatoes (boil potatoes until soft) for about 15min

Heat olive oil and gently toast garlic and cayenne peppers until fragrant

Add leeks and stir

Add parboiled potato cubes and stir

Add oregano and salt and pepper to taste

Serve up!
