Ingredients

Makes 5–7 pieces, depending on size (amounts in parentheses are for 150 g pancake mix)
  • 3.5 oz (5.3 oz)pancake mix (100 g (150 g))
  • 1(medium) (2 large) egg
  • 1 tbsp (1 1/2 tbsp)sugar
  • 1 tbsp (1 1/2 tbsp)mirin
  • 1 1/2 tbsp (2 tbsp)honey
  • 1/3 cup(about 70 ml) (about 1/2 cup (100 ml)) milk
  • as neededSweet red bean paste (anko),

Steps

  1. 1

    Add the egg, sugar, honey, and mirin to a bowl. Whisk well. Once combined, add the milk and pancake mix, and mix until smooth.

    Heat a skillet over medium heat. Once it's hot, reduce to low heat.

  3. 3

    Lightly oil the pan. Place the skillet on a damp cloth folded in quarters for 5 seconds to cool the bottom slightly.

  4. 4

    For mini dorayaki, use a tablespoon to pour the batter; for regular size, use a ladle. Pour from a height to help the pancakes form a round shape.

    When bubbles appear on the surface, flip and cook for 10 seconds, then remove from the pan.

  6. 6

    To prevent drying out, wrap the pancakes in a damp cloth to cool.

  7. 7

    Sandwich sweet red bean paste (anko) between two pancakes. For best texture the next day, wrap each dorayaki in plastic wrap and seal the ends.
