Add the egg, sugar, honey, and mirin to a bowl. Whisk well. Once combined, add the milk and pancake mix, and mix until smooth.

Heat a skillet over medium heat. Once it's hot, reduce to low heat.

Lightly oil the pan. Place the skillet on a damp cloth folded in quarters for 5 seconds to cool the bottom slightly.

For mini dorayaki, use a tablespoon to pour the batter; for regular size, use a ladle. Pour from a height to help the pancakes form a round shape.

When bubbles appear on the surface, flip and cook for 10 seconds, then remove from the pan.

To prevent drying out, wrap the pancakes in a damp cloth to cool.

Sandwich sweet red bean paste (anko) between two pancakes. For best texture the next day, wrap each dorayaki in plastic wrap and seal the ends.
