Tastier than clams!? My top recommendation for clam chowder♪ The scallops are hearty and add great flavor☆
The origin of this recipe
I had some leftover boiled scallops and decided to use them instead of clams to make clam chowder. It was so delicious that I now often make this version instead of the clam one.
No need for sand removal, and no shell waste, which is a plus♪

Ingredients

Serves 4 servings
  • 3 1/2 ozboiled scallops (mini size)
  • 1large (or 2 small) potato
  • 1/2onion
  • 1/3carrot
  • 1 tablespoonolive oil
  • 2 tablespoonsall-purpose flour
  • 1bouillon cube
  • 1 1/4 cupswater (300ml)
  • 3/4 cupmilk (200ml)
  • Parsley to taste (for garnish)
  • Salt and pepper to taste

Steps

  1. 1

    Cut all the vegetables into 1/4 to 1/2 inch cubes.
    After cutting the potatoes, soak them in water for a few minutes, then drain them in a colander.

    Heat olive oil in a pot and add the vegetables. Sauté over medium heat.

    When the onion becomes translucent, add the flour and sauté until the floury texture is gone.

    Pour in the water, milk, and bouillon cube. Turn the heat to high, and once it boils, reduce to low and simmer for about 10 minutes, stirring occasionally.

    Once the vegetables are tender, add the scallops and simmer for another 3-5 minutes. Season with salt and pepper to taste, and it's ready!

    Serve in soup bowls and garnish with parsley.
    Add some French bread for a café-style soup set♪
