Stir fried Chilli Noodles

It's the first day of the week and over the weekend, Kings and I had a mega overload of food - we kicked off Friday with a french dinner at a really fancy restaurant, most of our saturday was spent at a Food show (where we ate for 5hrs as we went around 200 stalls) and then Sunday after church we ate a lot more food with our friends. So when Monday arrived, I was in the mood to make something absolutely simple and something that took no time because we were pretty tired and hungry :)

Boil the noodles and set aside

Heat the pan and when its hot, add the fresh garlic and chopped spring onions

As it cooks, add the chillies (THE HEAT!!!!!)

Next add the mushrooms

I used a bit of the pasta water and added it to the pot just so it didn't get dry as the ingredients cooked - you might want to keep a bit of that if you choose

I added the masalas, some salt, and a bit of pasta water and let it cook

Once it was ready, I tossed the noodles in it

Garnish it with some freshly chopped coriander leaves and your VERY-LAZY week night dinner is ready!

The flavor reminded me of eating some maggi noodles (Indian brand)

It was also REALLY spicy :), so if you feel its really hot, add some tomato ketchup to the pot when you toss the noodles
