Sandwich: Egg Salad

Hard boil eggs if you don't have any: Boil enough water to entirely cover eggs, CAREFULLY place eggs in water (with a sifter or something, good eggs sink and will crack if dropped in) and bring down to simmer. 12 minutes later take the eggs out and place into cool water until cool enough to handle. HB eggs last a week.

Chop your eggs before you add mayonnaise. Take a yolk out if you are trying to be healthier. Toast the bread while you mix up mayonnaise and chopped egg, add salt/pepper to taste

Spread on toast, eat, and be happy :D. You get about 1 sandwich per egg (I guess it depends of the size of the bread and eggs). Only use 1 piece of bread and use as a spread if you are trying to eat less. DOES NOT LAST LONG so eat there and then. Not a sandwich you send you kid to school with for lunch. Good protein snack.

I make this with all the children's hard boiled eggs from the Easter Holiday every year and also sometimes in between when we are just craving it! I am a fan of miracle whip's flavor however, I will use mayonnaise if that's what I have. I also normally use celery seed as I enjoy the flavor of that as well. They sell these sandwiches at a store at our local train station. I wanted to be able to eat as many of them as I like, so I tried making them myself. I like the fact that they're looks so colorful.The foundation of this sandwich is the egg and nanohana. After that, you can add and combination of ham, lettuce, tomato, shrimp or bacon.The sandwiches will have a nicer texture if you chill them in the fridge for a while, as the bread will absorb some of the filling.If you make the sandwiches at night, wrap up in plastic and chill in the refrigerator, then cut them and eat in the morning they will be really moist and delicious.
