Sabudana Vada
I made this dish over the weekend. Can have it as evening snack. Ofcourse some have it during fasting seasons. Hope you enjoy the recipe

First wash the sabudana and soak it in water for 2 hours. Drain up the water after 2 hours.

Boil the potato. Peel off the skin and mash the potatoes using masher or big spoon. Keep it aside

Dry roast the groundnuts until they are brown. As much possible, peel off the skin. Now slightly grind the groundnut. Make sure its coarse and does not become powder.

Now take a bowl and mix the sabudana, potato mash and groundnut. Add chilli, jeera, salt and coriander leaves. Mix it well

Make small balls out of the mixture. Using hands, press the balls and flatten them to make shape of vada.

Heat oil in the pan and deep fry these vadas till they become golden. Make sure flame is medium/low

Hot sabudanas vadas are ready to be served. Serve it with tomato sauce or chutney.
