Ingredients

  • 1 cupyellow lentils (about 200 grams)
  • 1/4 cupvermicelli noodles (about 30 grams), or more to taste
  • 2large onions
  • 4medium carrots
  • 3medium tomatoes
  • 2medium potatoes
  • 2 clovesgarlic (optional)
  • 2medium zucchini
  • 1small cube butter
  • Salt
  • Cayenne pepper
  • Ground cumin

Steps

    Rinse the lentils well, then place them in a pot with the vegetables.

    Add water and cook over heat until everything is fully cooked.

    Let the mixture cool slightly, then blend the lentils and vegetables using a tomato blender or hand blender.

    Strain the soup, return it to the pot, and season with salt, cayenne pepper, ground cumin, and a small cube of butter.

    After adding the butter, the soup will reach the desired consistency.

    Toast the vermicelli noodles, add them to the soup, and simmer until the noodles are cooked.

    Serve the lentil soup hot with green onions, toasted bread, and lemon wedges as desired.
