This is a wonderfully delicious low calorie, high protein lunch time recipe! (430 calories with 45 grams of protein). The chicken I adapted another recipe from Cookpad, Taiwanese Chia Yi Chicken by Kyra Liao.

This is a wonderfully delicious low calorie, high protein lunch time recipe! (430 calories with 45 grams of protein). The chicken I adapted another recipe from Cookpad, Taiwanese Chia Yi Chicken by Kyra Liao.

Feel free to cook the chicken however you'd like. I ended up boiling the chicken breast for 20 minutes in water. I then took the chicken out of the water, shredded it, and put it into a pan to fry with a bit of olive oil, some spring onions, and shallots. This gave the chicken a really nice flavour!

Put salad, blueberries, cut up avocado, cut up chorizo and shredded chicken in a bowl. Sprinkle some olive oil or balsamic on top if you fancy! Enjoy
