Easy and Delicious Beef Mixed Sushi

The origin of this recipe
Over 10 years ago, I started making this recipe after cutting it out from a newspaper's recipe section. I've made it many times and adapted it to my style. Using slightly better quality meat makes it irresistible (*≧艸≦) lol. It's also perfect for sushi rolls during Setsubun ♫
Cooking Instructions

Make the sushi vinegar. Combine all ingredients in a bowl and mix until the sugar is completely dissolved.

Cook the rice slightly firmer than usual. Once cooked, transfer to a large bowl and mix with the sushi vinegar, then let it cool.

To cool the rice, I use the 'Sushi Rice Dryer Cooling' method from Daimajo-san's recipe ♪ Recipe ID: 18060463

Heat oil (not listed in ingredients) in a frying pan and sauté the beef. Once the beef changes color, add the ★ ingredients and simmer until the liquid is reduced by half.

Be careful not to overcook the beef as it will become tough ☆ Sometimes the liquid doesn't reduce quickly, but don't worry, you'll use the broth later.

Turn off the heat and leave the beef in the pan... Finely chop the pickled radish and thinly slice the shiso leaves. (During this time, the beef absorbs the broth)

Cut the beef into 1cm wide strips. (Place a sheet of parchment paper on the cutting board to avoid mess) Mix the remaining broth in the pan with the sushi rice.

Mix in the chopped beef, pickled radish, and shiso leaves.
Sprinkle with toasted sesame seeds, shredded nori, and more sliced shiso leaves to finish ♪

This recipe was handed down to me by my mother. If you make sushi vinegar to stock, as long as the sugar and salt have dissolved there's no need to let it rest for a day. If making the sushi vinegar on the spot for one batch of sushi rice (3 rice cooker cups' worth) you need 80 ml of rice vinegar, 2 to 3 tablespoons of sugar and 1 teaspoon of salt. The rice should be just the right sweetness. Microwave the sushi vinegar to dissolve the sugar and salt (about 20 seconds).Step 1: Cook the rice so that it's on the firm side.Step 3: Use the rice after it's cooled down a bit. If cooking 2 rice cooker cups, use 7 cm of konbu seaweed and 50 to 60 ml of sushi vinegar. While you should drain off the rice in a sieve before cooking it, it will still taste good if you just cook it right after rinsing it. It's fine to omit the kombu.
